The first time I served my kids this salad, their reaction was priceless. I had been offeringsalad at meal times for ages, and the kids never really took to it. But the night I served this salad, they weren’t just asking for seconds, they were fighting over the last spoonful! I’d been waiting for that moment forever. Mom win! So of course, after a reaction like that, I couldn’tkeep the recipe to myself. I have to share it with you.

Another thing, before I get into the deliciously crisp details: this is not just my kids’ favorite salad; it’s my new favorite salad, too. I’ve been obsessed with it for about two weeks now, eating it almost every day! It’s refreshing and green and there’s broccoli in it, so we consider it a super choice for nutrition.

Variety for the Win

One of the reasons we love this salad is that it presents broccoli to kids in a new way: shredded! Most produce departments sell broccoli slaw now (Trader Joe’s has a really tasty bagged broccoli slaw.) So you should be able to find it at your local supermarket.

We believe kids should taste and try different fruits and veggies in a variety of ways. This means roasted, raw, pureed, frozen, juiced, and dried. That way, kids can learn to enjoy the taste of different foods and mature their palate in a way that will prime them for tasting and trying more.

Broccoli is a great source of fiber and it’s high in vitamin B, which gives energy to tired kids. It even has a decent amount of protein in it for a vegetable. We love broccoli! And this salad offers your kids a good chance to love it, too.

This salad contains shredded broccoli slaw, diced apples, dried cranberries, sliced almonds, and poppyseed dressing. It’s sweet and crunchy and inviting. We even figured out how to turn it into a meal: add some cold, leftover chicken.

If your kids like the shredded broccoli slaw, do try it in other recipes. We add ours to stir fry, salads, tacos, sandwiches, pitas, noodles, etc. There are a lot of ways to make this super-convenient veggie taste great.

Ingredients

  • 2 medium apple
  • 4 cup shredded veggies, bagged (such as broccoli slaw)
  • 1/4 cup poppy seed dressing, light
  • 1/2 cup cranberries, dried
  • 1/4 cup almonds, sliced

Instructions

  • Dice apples and toss with broccoli slaw. Mix in a bowl with dressing.

  • For homemade poppyseed dressing, try this recipe. Otherwise, we love the Brianna’s brand.

  • Add in the remaining ingredients; serve or store covered, in the refrigerator.

This is excellent! My husband is not a big fan of raw broccoli, but he thoroughly enjoyed this dish. All 4 of my children thought it was “Delicious!” I did change one thing, though. I went to 2 stores for the broccoli slaw and neither store had it. So, I just took fresh broccoli stalks and grated them myself. I have never used broccoli slaw before so I don’t know if there are other ingredients besides the broccoli. (Based on the recipe photo, I would say there is also carrots and red cabbage – I did not add these to my homemade broccoli slaw).
