Ingredients

1 cup of chopped onions

1lb canned green peas

1 cup lentils

3 cloves of garlic (crushed)

1 bunch parsley

4 chopped tomatoes

1tbsp non-hydrogenated Margarine

1tsp Tumeric

1tsp Black pepper

250g Carrots

1 tsp Cinnamon

Salt

-Guide-

  1. In a cooking pot, melt your butter, onion, turmeric, salt, garlic, ginger, cinnamon, carrots, and black pepper. Stir gently until the onion is brown and tender. Add your tomatoes and stir for 3 minutes
  2. Add water three glasses and lentils and simmer for 20 minutes
  3. Wash and clean your green peas and add them to the cooking pot. Stir for three minutes
  4. Simmer for another three minutes then serve with rice

2. West African Vegetable Stew

Blending savory and sweet ingredients is what most people tend to avoid when preparing any dish. But with this West African vegetable stew, you will get an incredible taste that gives a mouthwatering experience.

Ingredients

  1. 1 kg peeled sweet potatoes (cut into ¼” pieces)
  2. 15oz chickpeas (drained and rinsed)
  3. 1 bunch of Spinach (coarsely chopped)
  4. 1 tsp red pepper (crushed)
  5. 3 cloves of garlic (crushed)
  6. 2 medium-sized onions
  7. 1 tsp ground cinnamon
  8. Cooking oil
  9. 3 medium-sized tomatoes (chopped)
  10. Salt

Guide-

  1. Sauté onions and garlic until tender
  2. Add salt and tomatoes and cook them for three minutes
  3. Add the sweet potatoes and keep stirring the mixture for 4 minutes. Add pepper, cinnamon, and a cup of water and simmer for 10 minutes
  4. Add your chickpeas and Spinach and simmer for 7 minutes
  5. Serve while hot with rice

Ingredients

1 cup frozen peas

1 pound potatoes (peeled and chopped into sizeable pieces)

1 bunch of cilantro (chopped)

4tbs olive oil

1tsp paprika

1 can of diced tomatoes (un-drained)

1/2tsp black pepper

3 tbsp lemon juice

1/2tsp turmeric

5 fresh carrots

1 &1/2 cup vegetable broth

1tbsp ground cumin

1 cup of turnips (peeled)

Salt

-Guide-

  1. In a skillet, put your cooking oil and heat it for one minute. Add turmeric, paprika, and cumin. Stir gently for 2 minutes
  2. Add cilantro, salt, garlic, turnips, carrots, potatoes, and tomatoes. Stir for four minutes then add broth and cook for 25 minutes
  3. Add peas, pepper, and lemon juice. Simmer for about 5 minutes then serve hot with rice
  4. Garnish with cilantro strips
